
Vegan Cream of Parsnip Soup Recipe
A simple Cream of Parsnip Soup recipe that’s vegan friendly.
Ingredients:
- 1.5 liters of water
- 1 sweet potato
- 2 yellow potatoes
- 1 parsnip
- 2 carrot sticks
- 1 celery stick
- ½ pear
- 1 table spoon of salt
- 2 g turmeric powder
- 2 g ground coriander powder
- 2 g ground chipotle pepper
- 1 table spoon of cream (optional)
- Pot of water
- Root Vegetables
- Pear
Tools: Hand Blender
Preparation:
- In a pot, bring 1.5 liters of water to a boil
- Peel potato, carrot, and parsnip
- Core the pear
- Roughly chop all vegetables and the pear
- Add all ingredients to boiling water
- Boil for 30 minutes
- Add turmeric, coriander, chipotle and salt
- Boil for another 20 minutes
- Check to see that all vegetables and cooked and tender
- Blend to puree using the hand blender
- Let it cool for 5 minutes
- Pour into bowl and garnish with cream, parsley and basil
- Chopped Root Vegetables
